INGREDIENTS

1 pound ground beef
2 cans RO*TEL undrained (10 oz)
1 packet taco seasoning 1 oz
1 can corn drained (15 oz)
1 cup cornmeal
2 teaspoon sugar
1/2 teaspoon salt
1 large egg beaten
1/3 cup milk
2 tablespoon vegetable oil
1 1/2 cup shredded cheese
Pam Cooking Spray
sliced black olives optional
optional for topping – lettuce avocado, cilantro, spring onions, sour cream, hot sauce

INSTRUCTIONS

Preheat oven to 350°
Spray a pie dish using Pam Cooking Spray.
In a large skillet, brown ground beef. Drain grease.
Add envelope of taco seasoning, both cans of Rotel and can of drained corn. Bring to a boil, stirring often. Reduce heat to medium and simmer for about 10 minutes, stirring often. If mixture gets too dry, add a tablespoon or two of water.
Combine cornmeal, sugar and salt in a mixing bowl.
In a separate bowl, whisk together egg, milk and oil.
Mix together cornmeal mixture and egg mixture.
Pour mixture into greased pie dish – use a spatula or back of spoon to make an even layer.
Spoon meat mixture evenly over cornmeal crust.
Bake for 20 minutes.
Remove from oven. Sprinkle with shredded cheese. Return to oven for 5 minutes or until cheese is completely melted.
Cool for about 15 minutes before cutting and serving.
Top with black olives, lettuce, avocado slices, cilantro, spring onions, sour cream, hot sauce or anything else you prefer.

National Goof Off Day on March 22nd each year gives everyone the opportunity to have a little extra fun. The day is also known as International Goof Off Day.

It is a day to relax, enjoy and goof off. Do something fun and leave the work until tomorrow. Everybody needs to take a break from time to time. It is often so easy to get so involved in the work and pressures in our lives. So stop, take a break, find something different!

Let any goofy idea pop into your head. Make paper airplanes from seed packets. Doodle pictures of poodles in puddles in Peru. Play a game of Jenga with randomly stacked spice jars. Or do the obvious and spend the day in your pajamas doing nothing.

Sock Races – When things have gotten mind-numbingly boring, this goofy game will bring about some giggles and definitely burn off some boredom. Empty out the sock drawers. Blanket Fort – This classic way to goof off can lead to naps, reading books or playing with other toys. But it’s also a surefire memory maker, too.
Write a Song – Take a song the whole family likes and write a new verse to it.

Strictly speaking, goofing off is the avoidance of work. So whatever you do, try not to look like you are working.

Monica (Moeller) Dufour of Davidson, MI founded National Goof Off Day. According to official records, the first celebration took place in 1976. In an interview with the Detroit Free Press in 1983, Moeller suggests the first event may have been a few years later. Whenever the inaugural day took place, it’s no surprise National Goof Off Day was created by a kid with the direction to do things out of the ordinary.

NATIONAL FRENCH BREAD DAY – March 21

French bread, also known as a baguette, is a long thin loaf made from basic lean dough. Its length and its crisp crust define it. These sturdy loaves make delicious sandwiches, but they also go well with any soup. Any leftover bread makes delicious French toast, too!

I could eat french bread any day and any time. Making sandwiches on this bread 6 inch i have to cut it into to make two meals. Eating suop and bred are yummy especially french bread or making garlic toast is so tasty!!
